Lost and found ~

I was talking to my daughter on the telephone the other night about of all things oatmeal cookies, and we both remembered a really good oatmeal cookie I used to make. I told her I would find the recipe and call her back; I was certain I knew exactly where it was. Well, as it turned out I didn't, it took me on a through search through all of my cookbooks and recipe files...I am somewhat organized...and  I couldn't find it. Darn, I hate loosing a good recipe.

I was certain it was lost when I remembered the one place I hadn't looked, my old recipe box. There it was! Aunt Selma's Best Oatmeal Cookies. You can tell from the picture that this recipe got a lot of use. And I know why...they are delicious!

This morning I made a batch ~ totally yummy. Unlike traditional oatmeal cookies these have chopped pecans in lieu of raisins.

I don't really know why they are so good, you will have to take my word for it. But so you can tell for yourself I am giving you the recipe...now, don't loose it!

Aunt Selma's Best Oatmeal Cookies

creme together:
1C shortening
1C white sugar
1/2 C brown sugar
then mix in one egg

Sift together:
1 1/2 C flour
1tsp soda
1 tsp cinnamon

Add to the creamed mixture along with:

1 1/2 C oats
3/4 C finely chopped pecans
1tsp vanilla

Chill dough for one hour then put spoonful on greased cookie sheet (I use parchment paper)
and flatten with sugared glass

bake at 350 for 10 mins.

Bon Appetit

  8. Thanks for dropping by Adrienne. I agree... rain is truly needed. Oatmeal cookies are my number one favorite cookie, even over chocolate chip although I like those too. Thank you for sharing the recipe. I look forward to tasting them with pecans instead of raisins. Love your photos. Hugs!

  10. Hi Adrienne,
I love oatmeal cookies and will definitely give your recipe a try. I prefer nuts to raisins so this will be right up my ally as far as ingredients.
    Enjoy your day.

  11. These look delicious, Adrienne! I'm wondering if using shortening instead of the usual butter is what makes these extra good. I haven't used shortening in a very long time, so we shall see.
